Unit definition:
One Unit of alcohol dehydrogenase activity is defined as the amount of enzyme required to oxidise one µmole of ethanol per minute, in the presence of NAD+, in potassium pyrophosphate buffer (86 mM), pH 8.5 at 25oC.

Catalyses the reaction:
Primary alcohol + NAD+ = an aldehyde + NADH + H+

This enzyme works on primary or secondary alcohols or hemi-acetals with very broad specificity; however the enzyme oxidizes methanol much more poorly than ethanol. 

Applications for the measurement of ethanol in the food, wine and beverage and pharmaceutical industries.
