Unit definition:
One Unit of dipeptidase is defined as the amount of enzyme required to produce one µmole of pNA from H-Asp-pNA (5 mM) per minute in Tris.HCl buffer (50 mM), pH 8.0 at 25oC.

Specificity:
Dipeptidase E catalyses the hydrolysis of dipeptides Asp-/-Xaa. It does not act on peptides with N-terminal Glu, Asn or Gln.

Applications:
Applications in medical and food industries for the measurement of aspartame.  Aspartame must be strictly monitored in food due to its L-phenylalanine content which is important for those suffering from phenylketonuria.
