Unit definition:
One Unit of chitinase activity is defined as the amount of enzyme required to release one μmole of p-nitrophenol per minute from p-nitrophenyl-β-triacetylchitotriose (2.5 mM) in MES buffer (100 mM), pH 6.2 at 40oC.

Specificity:
Random hydrolysis of N-acetyl-beta-D-glucosaminide (1-4)-beta-linkages in chitin and chitodextrins.
